Italian Oyster - Grow Your Own Mushroom Kit
Carefully undo the drawstring of your hessian sack and remove the colonised grow bag inside. (You can repurpose the empty sack for foraging or storing vegetables and herbs.)
Place your grow bag in an open room, out of direct sunlight. Avoid placing the kit in areas with strong air flow or a draft as this will cause it to dry out. A kitchen countertop or table works well. Using a clean, sharp knife, cut a small 5cm “X” in the centre of the bag.
Fill your spray bottle with clean water, and spray the opening from about 15 cm away every couple of hours, or at least 3–5 times a day. You’ll notice the mycelium at the cut getting thicker - this is a good sign. Tiny pinheads (baby mushrooms) usually appear within 7-14 days. Refill your spray bottle with fresh water every other day to reduce the risk of contamination. Continue misting daily and your pins will grow into mushrooms.
Harvest the mushrooms when the caps are at their biggest but before the caps begin to flatten out. Slide your hand behind the mushrooms, twist gently, and pull them away from the block. If you find this too stiff you can work a knife behind them instead. Prior to cooking, keep your mushrooms in the fridge, either in a paper bag or a container covered with baking paper.
For a second flush:
Once harvested, gently remove any leftover mushroom bits from the opening using clean hands. Heavily spray the opening to rehydrate the substrate. Keep the opening moist until a new pin set starts to develop. Then go back to the initial misting routine of 3-5 times a day from 15cm away. A second harvest should appear within 2-3 weeks!
Ideal room temperature for growth: 16°C - 21°C
